What a cool Q joint!  Currently in rebuilding mode after a fire consumed their former location on the other side of the lot.  this open air and picnic table is the epitome of a Texas roadside joint.  The owner and girlfriend were extremely friendly and were right at home living in the log cabin that the owner built with his father.

The brisket and ribs were solid.  I personally could have used a little less salt on the brisket and a little more rub or smoke on the ribs which were otherwise cooked to perfection.

This place reminds me of Nebraska in the first Big 12 Championship Game.  Overrated!!  Overrated!!

The one semi-redeeming item here is the pork "wing".  It's actually part of the shank but somewhat resembles a chicken wing.  Of course we discovered that this is a purchased item and just rewarmed here.

All the other meats had very little Q flavor.  We discovered later that it's because they use very little wood and primarily use gas.

  • Brisket is good.  The thin slices dry out fast.  Slices are salty all the way through, and this works to bring out the beef flavor.  Brined?
  • Rib is very good.  Not too fatty... well rendered.  Also salty all the way through the meat.  Brined?

  • Brisket is not fully rendered.  The meat accordians, but won't pull apart.  Chewy.  Bark is bitter.
  • Rib is fully rendered and pulls of the bone easily.  Meat is salty all the way through - brined?
  • Sausage is sliced lengthwise (ala Kansas City).  Salami flavor profile with black pepper.
  • Jalapeno Cheese sausage is also sliced lenthwise.  It is chewy and spicy.

  • Brisket is rendered and moist... but still tough on the chew.  Is this an issue with reheating?
  • Rib is big and meaty.  Tasty.  Light coating of rub is salty & spicy.
  • Sausage is another with the homeade bologna or salami flavor profile with black pepper.
  • Jalapeno Cheese sausage is quite chewy.

  • Brisket is moist and falling apart... but chewy.  Probably has been held for a while.  Clean flavors, but no rub.
  • Sausage is a commercial product (Hillshire Farms?).
  • Rib is tasty.  Falling off the bone, but there are multiple textures in this piece.  Chewy on the finish.
  • Hot Link has a mushy texture.  It is salty, with a spice that has a little afterburn.

  • Brisket is a lean slice of stand-up style brisket.  Smells bitter to my nose, but tastes clean.  No rub?
  • Ribs were mixed on our platter.  Mine was an end rib that was chewy like jerky.  Doug's was "like butter"... fully rendered and tasty.  Plain salt & pepper rub here.
  • This is a sausage of many flavors.  Complex spice blend with sage in the mix.  Has a good deal of heat on the finish.
  • Pork butt was also "like butter".  Melts in you mouth.  Pork was cut into bite sized chunks and then cooked further to fully render the meat.  Excellent.

  • Brisket is stand-up style, with a nice spice in the rub. Some bitterness in the meat.
  • Sausage has a good meaty flavor - like homeade bologna or salami. Creosote.
  • Rib's black coating = creosote. Sweet glaze helps to cut the bitterness.

  • My first slice (sauced) seems to be moist and fully rendered, with some bitterness noticed in the bark.  Second piece (without sauce) is chewy, not fully rendered. and more bitter. 
  • Rib is unnaturally hot - reheat?  There is some creosote in the rib... evident even underneath the sauce.  Second piece seems modestly better.
  • House made sausage has a good meaty flavor, and a nice spice.  This is a good sausage!

Main Fare:

  • Rib is outstanding.  Fully rendered, good meaty flavor that pulls easily from the bone.  Lightly sauced/basted with an interesting/unique blend of spices (reminded me of a mole-type sauce).  Not a blend of spices that I would naturally mix, but it definitely works here!
  • Brisket has a good, clean meaty flavor with a nice dry rub on the crust. My lean slice was a bit chewy, but we arrived late to the party thanks to Tom Tom (our GPS navigation).
  • Sausage has what I can only describe as a bit of a "funky" flavor.  It has a nice spice to it.
  • Spicy Sausage has a sweet potato flavor profile at the beginning, and then moves to spicy.  Very nice.
  • Pork Loin is very nicely done.  Thinly sliced and spiced just right.
