  • Sausage - Nicely balanced and good texture     -- Double Boner
  • Sausage - Good hot spice; Juicy - maybe a little greasy    -- Smoke Daddy

  • Brisket - Lean was firm and chewy, but the fatty was soft and tender.  Mild smoke with just a hint of spice on the finish.  Good.    -- Smoke Daddy

  • Big Ass ribs.  Meat pulls off the bone with the slightest tug.  Not too spicy, but great flavor in these, and the texture is excellent.  This is what a rib should be!

You know you've arrived when you walk through the door from the gravel parking lot -- fire nipping at your feet, and lots of smoked meat being pulled directly off the pits.

  • Sausage is not too hot, but with a good blend of spices. However it is a little too salty.
