  • Sausage - Nicely balanced and good texture     -- Double Boner
  • Sausage - Good hot spice; Juicy - maybe a little greasy    -- Smoke Daddy
  • Sausage - ...just didn't live up to all the hype    -- Eric Behrs
  • Brisket - Lean was firm and chewy, but the fatty was soft and tender.  Mild smoke with just a hint of spice on the finish.  Good.    -- Smoke Daddy
  • Beef Steak - Thin, but nicely done.  Extremely peppery, but tender and juicy    -- Smoke Daddy
  • Pork Steak - Similar to beef steak, but not as tender    -- Smoke Daddy

MAIN FARE:

  • Big Ass ribs.  Meat pulls off the bone with the slightest tug.  Not too spicy, but great flavor in these, and the texture is excellent.  This is what a rib should be! 
  • I could fall face first into a pile of these [ribs]!
  • Barely have time to write, I must get more of these [ribs]!  Tender, great flavor - Wow!   -- Double Boner
  • Sausage is the best yet!  Great spicy flavor, medium firm texture.  Hot enough to make the grade.   -- Assman

  • Sausage is good with a nice texture and good CenTex flavors.
  • Pork Chop is outstanding!  Melts in your mouth.  -- Assman
  • Prime Rib: Wow!  Lean, tender, and moist with a mild smoky flavor.
