  • Sausage: Unremarkable ... no, wait - it's pretty good. Small diameter links
  • Potato Salad: Finely mashed, like paste.
  • Brisket: Fatty, but good flavor and bark.
  • Spare Rib: Very wet; kinda spongy. Good smoke flavor with a medium rub.
  • Sauce: Complex taste. Cinnamon?
  • Hot Link: Headliner meat. Homemade. Very grainy fill and tough casing, but a nice burn - cayenne & paprika?
