Main Fare:
- Brisket is chunky, chewy, and sweet
- The rib has a pork chop consistency... chewy & needs more time to fully render. It has a sweet glaze on the finish, but that can't make up for the chewy rib.
- Sausage has a course grind, and a nice blend of spice and heat. Very good!
- Pork chop/steak has good texture and flavor. It is quite thin and a bit crisp around the edges... is this smoked or grilled?
Other Fare:
- Boudin is gooey with a crisp casing. Yum.
- Potato salad is a mayo and mustard blend. Good.
- Slaw leaf has turned bitter and lost its crunch. Seems like it would be good when fresh.
- Twice baked potato casserole is hot and good.
- Pecan cobbler is an interesting combo with good flavor, but is too dry.
- Peach cobbler is gooey with canned peaches. Bland.
Atmosphere:
- Looks like brand new construction with a log cabin veneer. This is a big place (If you build it, they will come?)
- Large catering rig out back may have been how this business got started.
- Our servers show an interest in the Barbecue tour concept.
